Green Peas and Sweet Corn Parathas




There are some days, when I just don't feel like preparing elaborate meals, but am still looking for something wholesome and filling. Parathas are my perfect answer to such moments. With a stuffing of your choice, the humble paratha can be personalised and made fancy to suit your liking. Though Alu Paratha has been an all time favorite at home, every other Parathas that have been tried till date, have been a success. Here is my latest experiment with the Paratha family with green peas and sweet corn. Takes only half an hour to prepare and even less to devour :)


Ingredients:
Wheat Flour - 1 cup
Water - 1 cup
Ajwain / Carrom Seeds - 1/2 tsp
Green Peas - 1 cup
Sweet Corn kernels - 1 cup
Onion - 1 small (very finely chopped)
Cumin Powder - 1/2 tsp
Red Chilli Powder - 1 tsp
Garam Masala Powder - 1 tsp
Salt - to taste
Ghee

  
Method:

  • Make the roti dough with wheat flour, ajwain, a little cumin powder, salt, water and keep aside. 

  • Boil the green peas and sweet corn kernels, drain the water and keep aside, allow to cool.
  • Then, put them in a blender and blend into a fine paste, without adding water.


  • Heat oil in a pan and add in cumin seeds. Once they splatter add the finely chopped onions and let it roast till it turns golden brown.
  • Add in the chilli powder, cumin powder, garam masala powder and salt. Stir well.
  • Now add in the green peas-sweet corn paste into the pan and mix well. Take it off the stove and keep aside.


  • Once cooled, make equal portions of this mixture and make balls out of them. Keep aside.
  • Make medium sized balls out of the roti dough that has been prepared.
  • Flatten out the roti dough to about 3 inches in diameter and place one masala roll in the centre. Fold the dough from four sides, flatten it with your hands, dip it in flour and gently roll out the stuffed roti evenly.
  • Make similar such stuffed rotis and roast them on a pan over medium flame. Apply ghee and serve hot with Raitha.
