Celery Parathas - Guest Post by Pooja Rao

Its always a pleasure to hear back from readers about how some my posts here, helped them in their experiment in the kitchen. And when they send back pictures of their creations, I am simply delighted! :) Yes, these reader-feedback is like fuel to me as  food blogger and I am thankful to all of you who have written back to me with your food stories :)

So, one day when I got an email from Pooja with a picture of the Mushroom Fried Rice that she tried and loved from my blog, i was truly delighted to hear from her. Its wonderful how Internet can bring together two strangers based on common interest. And the common interest here being food! Oh yes, Pooja is one of the most ardent followers of my little space that she has tried and tested more than 15 recipes from my blog. On one occasion, she shared a picture of Capsicum Burji that she had tried and more than the delicious looking burji, my attention was on the very interesting celery parathas that she had made to team up the burji with. Being a huge fan of parathas, I asked if she could do a guest post for me, and she graciously obliged :) Thanks Pooja! :)

Over to her now....

“Oh my god, sounds so exciting” was my reaction when Nandita asked me to do a guest post. An ardent fan of Nan’s yum-yums, I agreed immediately!!!!! This is such an amazing blog, I have tried most of her recipes & have loved all of them.

Recently, I had been reading a lot about health benefits of celery, so when I saw it at a supermarket, just picked it up without knowing what to cook from it!!!! After a lot of thinking, the idea of making celery parathas hit me. It is a very simple recipe & I’m glad I tried it as it turned out to be very tasty!!! And now, celery is a frequent guest visiting my kitchen.

Pooja paired up the Celery parathas with tri-coloured Capsicum Burji. Healthy wholesome meal! And, isn't that a pretty sight :)

Cabbage-aa Undi - Konkani Delicacy | Cabbage, Coconut & Rice Dumplings - Guest Post by Deepa Shenoy

Konkani cuisine has some interesting flavours and variations. The use of coconut is very eminent in most dishes, be it in freshly grated form, added in as pieces to thicken the gravy or even coconut oil for that matter is used in some of the authentic Konkani dishes.
So, today I have here, one such delectable and absolutely healthy Konkani dish that is traditionally called Cabbage-aa Undi, which is basically steamed dumplings made of a delicious combination of rice, coconut and cabbage. These mildly spiced dumplings are steamed in a cooker using Idly plates and are served warm.

I have a very enterprising person here, sharing this recipe with us. She is my sister-in-law, a cousin brother's wife, who has some varied creative interests. Being a non-blogger, she shared some totally tempting pictures of her kitchen yums on her FB page, which was what made me request her to share an authentic Konkani dish for my blog page and this was the dish we decided upon :) Over to her :
"Here is a guest post for an awesome and a lovely blog :) Nanz, ur blog is simply superb..:)

Cabbage-aa Undi is a typical konkani dish usually taken for breakfast or as a snack. It is both nutritious and tasty as cabbage is used in the batter.  Here goes the recipe:"

Hara Bhara Kabab - Guest Post by Shilpa Kini

When I started this blog about a year back, I did not have any plans for it. I posted about what I cooked. Simple everyday cooking. No fancy elaborate recipes. The main purpose behind the blog was to keep a log for everyone reading (and for myself!) on the simple and healthy dishes needing not much time, effort and ingredients, which I manage to create in my kitchen amidst hectic daily life...  but never-the-less are yum in the tum! :)

Okay, so not much has changed since then. Even to this day, I post recipes only which are simple (as that is all I have time for!) and look for similar recipes on other sources as well. One thing I have decided to do anew is... host guest posts! Oh yes, I have featured two bloggers before with two very interesting dishes - Samosa and Carrot Walnut Cake. But whats going to be different now is, I plan to feature non-bloggers here who have some very creative simple recipes up their sleeves. Just a platform for them to share their recipes.

Today I have here a very bubbly person, from amchi Mumbai who happens to be my sister-in-law! :) Shilpa is my brother's wife and loves that extra twist and spice in her dishes. Her stuffed lady's finger is something I have heard a lot about and am waiting to try out someday! :P Meanwhile here she is telling us about another signature dish of hers - Hara Bhara Kabab, which look absolutely yumm!! Over to her :)

"Hello there! It is great to be doing something different... so here I am to post a recipe on my lovely SIL’s blog!

Once we were just casually chatting with each other... (and you all know what girls like us generally talk about after marriage right..!!?) yeah... it has to be either about their respective husbands or food. So this time it was foodie talks and I told her about the menu for the day and then went on talking about other things. At the end of the conversation she asked me.. ‘Shilpa, why don’t you do a guest blog post for me?!'  Now, with such an offer from ‘Nan’s yum yums’, I was very much excited and readily agreed. Out of over excitement I became generous with my ingredients and, you know what happens then! Yes, to my utter dismay the final preparation did not come out well as expected :( Nevertheless, I gave my second try and this time it was awesome! :) And so, here is my awesome Haara Bhara Kabab Recipe........!!"
