Cucumber & Carrot Raita with Roasted Peanuts topping



Parathas is one of my favourite dishes and I am extremely experimental about them. I love them for the mere fact that, they are a complete meal by themselves. Unlike for chapathis/rotis you do not need an elaborate side-dish to go with parathas. Just team them up with pickle or raita and you have a wholesome meal ready!

And when it comes to raita, I like to get creative there too. Usually to a bowl of curd, I add in grated vegetables - mostly cucumber, at times cucumber + carrots, at times tomatoes and then there is onions - with a blend of spice powders, a dash of coriander, at times a simple tadka/temper of mustard, urid dal and cumin seeds…. and my raita is ready! There are times when I go minimal and just add spice powder to curd to compliment my parathas or rice preparation. 
 
So this raita is one from the basics, one with Cucumber and Carrots in it. In order to make it a tab more interesting, I added in some crushed roasted peanuts. That extra crunch does add spunk to this simple raita :)
 

 
 
Ingredients
 
Curd – 1 bowl
Carrots – 1, grated
Cucumber – 1, grated
Red Chilli Powder, Cumin Powder, Salt – to taste
Roasted peanuts – 10-15, crushed 
Coriander Leaves – for garnish
  
 
Method
 
  • In a mixing bowl, add the grated carrots and cucumber. 
  • Add in the curd, chilli powder, cumin powder and salt. Mix well.
  • Garnish with chopped coriander and finally before serving add in the crushed roasted peanuts as toppings. If this is added in earlier, they would get soggy!
