Sprouted Moong and Mayo Sandwich



Ah... that feeling of goodness within, when you have prepared, served and enjoyed a good healthy meal! :)

Just back from a fabulous week-long holiday...( oh you can read all about it here! :) ) getting back into the kitchen was a blissful! As I did my grocery shopping, I saw some fresh lettuce leaves and I remembered the sprouted moong salad sitting in the fridge. There... I decided my menu for the next day in advance - it was this health packed sandwich!

It took me just a few minutes to plan it out and few more minutes the next day to lay it out on the table. 




Very often I get into this mood to cook healthy. I go all out... plan and cook with only healthy ingredients, try to avoid anything unhealthy... but the sad part is, this mood moves on as quickly as it came by! Blame it on laziness, tiredness... (oh, the excuses are endless :P) I resign to my easier routine of cooking what is easiest without much thought on whats best health-wise.

The health-conscious-me tries advising the lazy-me... that cooking healthy is not tough at all! With just smart planning, everyday meals can be made healthy in fact the effort is much less and with no compromise on the yum-factor!  

Lazy-me agrees... it is easy to cook healthy, with a little bit of planning. And the sandwiches... oh yum yum yum! :) Here is hoping that this mood lasts! :)

Minty Baby corn Sandwichlets!


 
Yeah, my fixation for baby-corn/sweet corn is obvious isn't it!? :) I just love the flavour of corn. From eating it as is with probably a little salt and pepper to transforming them into something exquisite, I am a fan of it all!
 
Here is my latest creation with baby corns. Its a simple bread preparation with baby corns flavoured with mint and chili flakes. I would like to call these adorable fellas, Sandwichlets! :) They are tiny! They are made up of bread quarters :) I did not plan them that way, they just seemed pretty that way when I had completed making them and was looking for the best way to serve them.
 
 



Oh, I just love the way those little ones are peeping through the bread slices! Adorable aren't they? :)

Spinach and Corn Sandwich








 Bread sandwiches have always been a favorite at home. And the hunt for that perfect cafe serving simple delectable varieties of sandwiches is always on. During our Pune days, one particular cafe served a Spinach and Corn sandwich, which was so yummy in taste and yet simple and lite on the tummy! So, after many months, I suddenly got reminded of that sandwich and decided to give it a shot at home based on my memories of the way it tasted.... and to my delight, we were transported back to that cafe, as this tasted very very similar to the good old Spinach Corn Sandwich we much loved!
