Ingredients:
Toor Dal - 1 cup
Onion - 1 medium (finely chopped)
Tomato - 1 medium (finely chopped)
Carrots - 1/2 cup (chopped into small sticks)
Potato - 1/2 cup (chopped into small pieces)
Dry Red Chillies - 3
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Sambar Powder - 1 tblsp
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Curry Leaves
Salt - to taste
Oil
Water
Method:
Carrots - 1/2 cup (chopped into small sticks)
Potato - 1/2 cup (chopped into small pieces)

Method:
- Pressure cook the toor dal with a pinch of turmeric, for about 10 minutes and keep aside.
- Heat oil in a pan, add mustard seeds and let it crackle. Add the dry red chillies, curry leaves and onions. Fry till the onions turn golden brown.
- Now add the tomatoes and fry for another 5 minutes.
- Add in the carrots, potatoes, sambar powder, turmeric powder, red chilli powder and salt. Mix well.
- Add a cup of water, stir and keep the flame on low. Close the vessel and let it cook till vegetables are tender.
- Now, add in the cooked toor dal and combine well.
- Let it cook for 5 more minutes. Garnish with coriander leaves and serve hot!
