Pasta in White Sauce


All our orders at Dominos, by default had a Pasta in White Sauce. It is our favorite. Its mild flavors make it delectable and light on the stomach. I have made Pasta in Red Sauce quite a few times and have been wanting to try my hand at Pasta in White Sauce.



After reading up a few recipes online and taking ideas from each, I created my own recipe and voila... I got a bowl full of Pasta in White Sauce ready for us to indulge in. It was yum! Maybe a little extra sauce could have been yummier. However, this is one dish, that is going to be repeated time and again at our home :)








Ingredients:

Pasta - 2 cups (I used Fusili)
Onion - 1 big (sliced/cubed)
Baby Corn - 4 nos (cut into one inch pieces)
Cauliflower - 10 to 12 (inch sized florets)
Turmeric powder - a pinchCapsicum - 1 big (sliced length-wise intho thin strips)
Cheese - 2 cubes (grated)
Pasta Mix Powder - 4 tsp
(else you may also use a mix of herbs such as basil leaves powder, thyme, rosemary powder)
Red Chilly Flakes - 2 tsp
Olive Oil - 1 tbsp

For the White Sauce

Milk - 1 cup
Corn Flour - 2 tsp
All Purpose Flour/Maida - 2 tsp

Method


  • Cook the pasta in water for about 15 minutes until they are soft on touch by a knife/fork. Drain out water and keep aside.
  • Par boil Cauliflower and Baby corn in a pot of water with a little bit of turmeric powder and salt. Drain out water and keep aside.
  • To one cup of milk, add the All Purpose Flour and Corn Flour and mix well, making sure there are no lumps. Keep this paste aside.
  • In a pan, heat oil, add sliced onions and saute till they turn golden brown.
  • Add the capsicum and mushrooms and saute for about 4-5 mins on medium flame.
  • Add the par boiled Cauliflower and Baby corn.




  • Sprinkle a bit of the Pasta Mix (or the mix of herbs), red chilly flakes and a pinch of salt and stir well.
  • Now add in the Milk-APF-Corn Flour mixture and half of the grated cheese and stir well.
  • Now, add in the cooked pasta and stir gently once again. Do not stir for too long, as the milk mixture would have begun to thicken by now.
  • Take off stove and garnish with the remaining grated cheese.
  • Serve hot!

  3. I kinda saute the all-purpose flour few seconds then add milk, no cornstarch. Turns out a good saucy consistency. But may be the corn flour made it thicker, otherwise you could have had the little extra sauce. Looks great, nevertheless!

  4. I too prefer pasta in white sauce over red sauce... Since I turned vegan I haven't had pasta... I feel like I could make some without the cheese but I know it will never taste the same...

    That second pic is really good...

  7. Came here from the Pasta event - And a lovely recipe you have :) I havent really tried making white sauce this way though. I saute the flour in some fat always. Must try your method sometime :)
