Hearty Kesari - for a baby shower! :)


There are so many moments in life, which I wish I could freeze forever! I have so many such treasured memories. And one person who has been by my side and a part of a several of these memories from my childhood, is my cousin sister. Just a year older to me, we are more like best friends than cousins and share a very close bond. 

In just a couple of months, my dear sis who is gracefully marching towards the lovely phase of parenthood, is going to make me one happy aunt! :) Yesterday was her baby shower, and I just had to make something special for her.



As part of the ritual, we are to give her sweets. I chose to make my own rather than buy, of course how else can I make it special for her, if not for some personal touch! Babies bring so much joy with them that fill our hearts with love. What can depict this feeling better than lovely heart shaped sweet? :)  





Ingredients
Rava/Semolina - 1 cup
Sugar - 3/4 cup
Milk - 1 cup
Water - 1 cup
Saffron food colour - few drops
Cashew nuts
Ghee


Method


  • Heat about one spoon of ghee in a shallow bottomed pan and add in the semolina, roast for 2-3 minutes on medium flame.
  • Take off the stove and keep aside.
  • In the same pan, (now emptied) add water and milk and bring to a boil.
  • Once boiled, add in few drops of saffron food colour and the roasted semolina little by little while continuously stirring the mixture in the pan, to avoid lumps.
  • Stir well and add in the sugar and mix well again.
  • Mix in 1 or 2 tea spoons of ghee and blend it into the mixture.
  • Allow to cook for about 5 minutes until all the excess water/milk is absorbed and the texture of the sweet mixture becomes a little firm and comes together as a ball.



  • Lay the mixture out on a plate and garnish with cashew nuts roasted lightly in ghee. 
  • Cut them out in shape of your choice. I used a heart shaped cookie cutter :)



  • Pick up these cuties and yum them up while still warm, they are soooo good! :)



  • I packed these up for my sister and she just loved them :) She said they were as yummy eaten after being chilled in the fridge as they were warm off the stove. Have your pick! :)
