Buttery Roasted Veggie Soup


Buttery Roasted Veggie Soup for the happy foodie mini!šŸµOh wait, it was yum enough for his mum too (she may have stolen a spoon or two while feeding him! šŸ˜œ) 


Ingredients
šŸŒ¼ Unsalted butter - 1tbsp
šŸŒ¼ Garlic - 1 pod
šŸŒ¼ Onion - 1 small, chopped 
šŸŒ¼ Veggies of your choice - 1cup, chopped 
šŸŒ¼ Salt, pepper - a hint
šŸŒ¼ Water - as needed 

Method
SautĆ© the garlic and onion in a pan until slightly caramelized. 
Add in chopped veggies, salt and pepper and allow to roast for a couple of minutes. 
Pressure cook the entire mix with a little water for 4-5 whistles. 
Blend the mixture into a smooth soup. 
Garnish with a dollop of ghee.


An experiment done right, says that bowl licked clean! šŸ˜
