Spinach and Corn Sandwich








 Bread sandwiches have always been a favorite at home. And the hunt for that perfect cafe serving simple delectable varieties of sandwiches is always on. During our Pune days, one particular cafe served a Spinach and Corn sandwich, which was so yummy in taste and yet simple and lite on the tummy! So, after many months, I suddenly got reminded of that sandwich and decided to give it a shot at home based on my memories of the way it tasted.... and to my delight, we were transported back to that cafe, as this tasted very very similar to the good old Spinach Corn Sandwich we much loved!









Ingredients

Whole Wheat Bread - 8 slices
Spinach - 2 bunches 
Corn - 1 cup 
Cheese cube - 1 grated
Butter - a little 
Salt and pepper - to taste 


Method

  • Wash the spinach bunches and roughly chop.
  • Blanch the chopped spinach in a pan of warm water for 5-6 minutes.
  • Remove from fire, drain water and keep spinach aside.
  • Par boil corn and keep aside.
  • Apply butter to the outer sides of the bread slices.
  • Add portions of spinach and corn in the inner sides of the bread slices and a sprinkle of grated cheese on top.  Season with salt and pepper.
  • Grill till bread slices turn dark brown.
  • Enjoy with chilli-tomato sauce :)
