There those days when you are really hungry and feel like gobbling up something yum, but at the same time you are too hungry to cook.... Sigh! Such a familiar situation! Well, I have some simple recipes up my sleeves to cater to such situations. This pan-fried paneer wrap is one such recipe.
We prefer chapathis over rice owing to the health benefits that wheat has over rice. And since chapathis are a regular at home, I sometimes make a few extra while cooking a meal so as to be able to grab them up later in the day when I return home really tired an hungry. Just a simple side would do and we are set for a meal in a hurry.
At times to make it more fun, instead of having chapathis and a side, we have them as wraps! Just spread the side on the chapathis and roll them up and munch on them. This way it is more fun to eat and easier to handle. So here is a very simple recipe for those times when you have very little or no mood to spend time in the kitchen cooking while your tummy grumbles away in hunger :)
For Pan-fried Paneer
Paneer/Cottage Cheese - 200 gms
Onoin - 1 Big
Bell Peppers (Capsicum) - 1 cup (I used a mix of Yellow, Green and Red Capsicums)
Pepper Powder - to taste
Salt - to taste
Oil - 1 tbsp
Tomato Ketchup - a dash
For Chapathi Wraps
Chapathis - 4
Mayonnaise Sauce - as required
Tomato Ketchup - as required
- Slice the Onion into fine thin slices. Keep aside a little bit for garnishing.
- Cube the bell peppers into little squares.
- Cube the paneer into an inch long pieces.
- Heat oil in a pan, and toss in the onions.
- Saute for a couple of minutes and then add in the cubed bell peppers. Mix well and allow to cook for about 2-3 minutes on medium flame.
- Add salt and pepper to taste and a dash of tomato ketchup.
- Finally add in the paneer pieces and mix well.
This can be eaten a aside as is, if you like it. Or read on further to make it a wrap :)
- Take a prepared chapathi and place it on a work board.
- Lay out a big lettuce leaf or 2-3 smaller leaves on it.
- Spread out the pan-fried paneer on the lettuce and make sure to leave a little space at end to of the chapathi as this end would have to be folded in.
- Smear some mayo and ketchup if you like.
- Sprinkle some raw onions on top.
- Now, gently roll it into a wrap by keeping the one side (the bottom of the wrap) folded in.
- Poke in a tooth pick to keep the wrap in place.
- Enjoy it warm :)
