Malai Kulfi


Most of my cooking experiments have been either main course dishes or sides. Desserts have not been my strong point. Lately however, an urge to venture into desserts has built up and last few days have witnessed me collecting dessert recipes from here and there. 

And when we are talking dessert, who better to reach out to, than my aunt Sandhya!? Since my childhood days, her love, interest and patience towards cooking has always inspired me and I believe to an extent has also rubbed on to me. We share the passion to try out varieties of dishes and today she is my one-stop-shop for interesting exotic recipes and useful tips on cooking. 

This simple to prepare, yet perfect tasting kulfi is one of her specialties. I enthusiastically tried it out a few days back and it was set and ready perfectly on time for my ma-in-law's birthday! To my greatest delight, she was absolutely delighted with the treat and savored the yummy kulfis heartily :) 



Ingredients

Milk -  1litre
Sugar- 1 cup
Cornflour - 2 tblspn
Milk Powder - 1 cup
Fresh Cream - 1 cup
Badam, Pistachio - 1/2 cup powdered

for additional flavor (optional):
Cardamam - 2 pods powdered
Khewra essence - few drops






Method
  • Boil milk and add sugar.
  • To a small quantity of cold milk, add cornflour and milk powder and make into a smooth paste. Keep aside.
  • Keeping the flame on low, add this paste to the boiled milk and mix well, stirring continuously until the consistency of the milk begins to thickens a little.
  • Remove the mixture off the flame and allow to under the fan, stirring frequently.
  • Once the mixture reaches room temperature, add fresh cream and powdered badam and pistachio, khewra essence and stir well to avoid the formation of lumps. 
  • Make sure the cream dissolves in the milks mixture. Also, do not mix too much as this could butter the milk.
  • Pour the prepared kulfi into moulds, place in freezer for a 4-5 hours to allow it to set. 
  • Enjoy yummy kulfi :)

  2. This is great and to think I would slave over a hot stove trying to condense the milk.They look so yummy and I am sure they taste great too.

  4. I've been planning to make some kulfis in this bloody Texas heat. Been so busy lately.
    Love those little matka's. Called "kulhad" in Hindi, I think. Too cute!
